Description
Selected bunches of Merlot perfectly healthy and harvested by hand, are dried in special crates for around 3 weeks. Soft crushing of the grapes and slow fermentation in stainless steel tanks. The Pignolo ages for 12 months in French oak tonneaux. The two wines are then assembled. Ruby Red. Bouquet of crispy dark cherry, small berries, and dark chocolate. The palate is distinguished by balance and "manly" pleasantness. The goulash with potatoes is one of the most recommended pairings but it goes well with seasoned cheeses as well. Suggested as meditation wine with good dark chocolate.

Vineyard
Clay soil of moraine origin, Eastern Friuli region. Guyot training system with a vine density of 4,500 vines/ha. The yield is limited to an average of 1.3 kg of grapes per vine.
Maturation
Bottle ageing for not less than 6 months before release.
