Vinification
The entire wine ageing process should be as gentle as possible, which is why the wine is first of all put into a Sedimentation tank installed. The natural clarification lasts between 12 and 24 hours, after which the wine is sent to fermentation in temperature-controlled stainless steel tanks or laid in wooden barrels. The vinification of wines from the VDP.GROSSEN LAGE is carried out according to the motto "As much as necessary - as little as possible", to preserve the character of the location, the terroir and the winemaker's signature and put it in the wine. The fermentation is therefore also partly spontaneous, so that instead of pure yeasts, the natural yeasts from the vineyard can be used.
Vineyard
The Nussbrunnen in Hattenheim, a location exposed to the south-southeast, was named after a spring whose origin still today and which was surrounded by nut trees. The nut well lies protected from cold north winds, on the lower Hattenheimer Won, adjacent to the Wissel Well. 1.6 ha of this location, which belong to the fillet pieces in the Rheingau, are owned by the Balthasar estate Ress. The special soil conditions, such as deep loamy loess soils, which guarantee an excellent water balance and existing microclimate make the Nut Well a top location. Thus the conditions are created to regularly produce top wines generate.
