Vinification
Cold film maceration of 6 hours for the extraction of primary aromas (terpenes). Pressed gently staying only with the noblest fraction of the must to achieve the finesse that this cava expresses. Two fermentations at low temperature, 16 ºC, the first (in stainless tanks) and the second (in the bottle), looking for a fruity and floral aromatic range so characteristic in this Valencian cava. The expedition liquor that we have used has been made with the same base wine with which the second fermentation was carried out, seeking to respect the original characteristics of this wine cellar.
