Description

Named "Audace" for the audacious method of production, this "rosé of maceration" is made from one parcel, one grape, and one harvest. A fantastic food-pairing champagne, it goes well with duck breast, roasted chicken, or grilled salmon.

Beautiful rich red colour. Nose dominated by fruits of the forest, red currants and raspberries. Rich mouthfeel with a lot of fruit and a red currant and liquorice finish.

Vinification

A portion of the de-stemmed berries are macerated for between 24-36 hours, then the juice is drawn off and blended with fresh juice from the press, from the same parcel. Full malolactic fermentation is allowed prior to aging in stainless tank until the following July.

Vineyard

Beauregard is the name of the parcel we use for making this rosé champagne. If we have a poor harvest in this parcel, we do not make a rosé champagne that year, in spite of heavy demand. For example, we made no rosé in 2014 and in 2016.

Our soil is argilo-calcaire, with a Kimmeridgian sub-soil.

Maturation

After bottling it is aged on the lees for 2-3 years, allowing the wine to evolve and gain complexity.
