Selective picking and harvest destalked. Traditional winemaking with 3-week vatting. Control of temperature during vinification. Soft and regular punching down. Aging in concrete tanks before bottling.
Vineyard
The vineyards are planted on a soil resulting from the breakdown of calcareous rocks by water, frost and temperature change during one of the last cold stage of the Quaternary period. Organic (since 2006) and biodynamic practices.
