Vinification
Selection of plots according to the age of the vines, the grape varieties and ripening. Fermentation in thermo-regulated stainless steel vats. Vatting for 15 to 25 days following tasting.
Vineyard
Deep gravel soil. Depending on the plot, the proportions of pebbles, gravel and sands are variable. The vineyard is traditionally cultivated, based on a population of 5000 vines per hectare. The trellising planes are raised to obtain a maximum illuminated leaf area.

Viticulture

Maturation
At the end of the winemaking process, each vat is meticulously tasted to select the wines that can go into this vintage. The wine is matured for 12 months in vats, with a reasoned supply of very low doses of oxygen necessary for the evolution of the tannins.
