Vinification
Handmade harvest with a selective sorting of grapes are proofs of quality. After desteming (70%) , the winemaking of Grenache and Syrah is made in different tanks. The fermentation lasts 4 to 5 weeks.
The malolactic fermentation is made in oak vats. Aging continues in big oak tanks during 10 months, 18 months demi-muids
