Description

It is a single vineyard cuvee All grapes are coming from the locality called “Mourre des Perdrix”, on the south-east of the appellation. It is a half-plateau situated on Courthezon. The terroir is composed by different soils: red clay with round pebbles and sandy marl.

Vinification

Handmade harvest with a selective sorting of grapes are proofs of quality. After desteming (70% grapes), the winemaking of Syrah and Grenache in the same tank and Mourvedre is put aside. The fermentation lasts 4 to 5 weeks depending on the vintage.

The malolactic fermentation is made in oak vats. Aging continues in oak vats during 10/11 months depending on the vintage, 18 months in demi-muids
