Vinification
After harvesting by hand in majority, the grapes undergo a total destemming. Vinification in concrete vats with daily pumping over for a better color extraction. The wine stays on the marc for more than 4 weeks in order to gently extract the phenolic compounds. This results in a long period of ageing in tank before bottling.
Vineyard
Influence of Mediterranean Climate. Summers are hot and dry. The 2015 vintage is a vintage apart thanks to a two-week lag in harvests bringing an additional maturity. Also, 2015 ranks among the small harvests but of excellent quality !
