Vinification
Hand harvested, destemmed, fermentation in stainless steel vats of small to medium size (never more than 45hl together). Daily pumping over, natural yeasts, temperature regulated, total skin contact 20-35 days.
Vineyard: Panzano in Chianti
All our vineyards (23 acres - 9 ha) are surounding the winery and are farmed organically with minimum impact on the environment. We have between 5500-6000 plants per hectare of vineyard and produce between 28-37 hl of wine per hectare. The vineyards are on steep slopes between 350 and 460 meters altitude benefiting from rocky soil and fresh winds to ensure no overheating in the summer. Sangiovese, Merlot and Cabernet Sauvignon are grown.

Maturation
The Chianti Classico ages for 1 year in used french oak barrels of 225, 400 and 500 litres. Further 6 months in stainless steel and 6 months on bottle before release.
