Vinification
De-stemmed grapes underwent a pre-fermentative maceration at low temperatures, for 24 hours. The alcoholic fermentation was in stainless steel tanks with temperature control, between 26⁰ and 28⁰C, for 12 days. Post-fermentative maceration in ‘cuvaison’ for 28 days. The wine was aged in American, French and Portuguese oak barrels for 4 months.
Vineyard
Indigenous and international grape varieties are grown on clay and limestone soils. The fresh summer nights, gentle winters and maritime influence are key factor in the production of quality wines with nice acidity, a typical characteristic from this region. Vintage starts at the end of August and continues through September.
