Description
Vinification Hand-picked in 12 kg crates, grapes are maintained at a temperature of 2º C until pressing of clusters. We make use of only the first 55-60% of the pressing, then racking (“débourbage”) without enzymes during a period of 24 hours followed by fermentation in stainless steel tanks. Partial malolactic fermentation, aging on lees and stirring until early January to promote uptake. Clarified with bentonite and lightly filtered. A small fraction (10%) is aged in barrels.
Pale salmon-pink colour with coppery highlights predominate floral aromas, rose petals and ripe apricot stone.
