Vinification
Cold maceration, prior to the beginning of the alcoholic fermentation. Fermentation temperature: 25ºC. One week maceration. Malolactic fermentaion in stainless steel vats.
Vineyard
These vines are located at the end of the Valley of Nekeas, where the acidity is higher. There, the soil -red clay with a great dreinage- is perfect for this variety.
