Description

Ruby red colour, suggestive nose of plums and cherries and with a hint of licorice and dark chocolate; an elegant wine with a complex and hedonistic bouquet and a long and rich finish. Best served at approx. 16° C.

Vinification

Hand harvest, destemming and selection on a vibrant table of the berries. Temperature controlled fermentation in stainless steal without added yeast for approximately two weeks. Regular punch downs and pump overs depending on the evolution of the fermentation. Afterwards the different wines age 14 months in new (10%) and used barrique and tonneaux barrels. Before bottling the final blend stays a few month in concrete and finally 4 months in the bottle before being released.

Vineyard

Ad Astra grows in our Maremma property called Mongibello delle Mandorlaie between Scansano and Magliano, only 11 km away from the sea at an altitude of 250m. The soil is mostly sand with granit stones and clay underneath. High density vineyard with 6600 plants per hectare.

Soil Type

The soil of the entire vineyard is characterized geologically by a kind of sandstone known as Macigno del Chianti. The thick layer of sand and reddish ocher color characteristic of the local terrain are the result of the erosion of this sandstone. This type of land, particularly poor in nutrients and water, encourages the plants to root deeply.

Viticulture

All our vineyards are managed organically (certified since 2017) and with the highest respect for the environment. Fertilization of the soil is carried out only with organic substances such as manure and green manure (seeding, growth, chopping and burial of leguminous plants such as field beans). Throughout the year, our skilled workers conduct all operations in the vineyards manually. To ensure a better quality grape, we keep the amount of grapes produced low through a variety of agricultural methods such as short-pruning in winter, a careful selection of the shoots in spring, and green harvesting in early summer. The harvest, of only the ripest and healthiest grapes, is done manually.
