Vinification
The grapes were carefully whole bunch pressed. The juice settled for 48 hours before racking, and underwent a long and slow fermentation using aromatic yeasts.
Vineyard
The Pinot Meunier from the iconic Roman Road vineyard was hand picked during the record-breaking 2018 harvest.
Maturation
The wine rested on fine lees to build palate weight before bottling in spring 2019.
