Vinification
The grapes are carefully crushed and left on the skins for a period of 5 days before fermentation. This process is called cold soaking and helps to extract good colour and flavour from the skins. Each grape variety is fermented individually in stainless steel tanks at 22 degrees Celsius to maintain its specific characteristics.
Maturation
To qualify as a Cape Blend, the wine has to include at least 30% Pinotage which provides the soft fruit and juicy tannins. The Shiraz adds silky tannins and spicy characteristics while the Cabernet Sauvignon the body and structure. A small proportion of the wine is aged in new barrels with the rest maturing in second fill barrel for a period of 12 months. The wine is then judiciously blended by the cellar master and left to age gracefully in bottle.
