Description
Freshness of the peach and complexity of the almond and bitter orange, accompanied by cooked fruit and a slight oxidation. Orchard fruits and rose mingle with bitterness and liveliness. Some evolutionary notes are reminiscent of Oolong tea and its sweet bitterness.

Vinification
Made from old vines of Vermentino, Vognier and Muscat, it is a vinification inspired by an ancient Georgian technique, and adapted to the grape varieties and Mediterranean climate. Harvested at optimal maturity, whole-harvest fermentation in stainless steel tanks, manual punching of the cap, long fermentation at low temperature, followed by malolactic fermentation and a long post-fermentation maceration of 3-4 weeks.
