medium ochre yellow. A full-bodied nose of dried stone fruits, mango and blossom honey. Underlaid with a hint of toasty aromas and oak spices. Very dense and concentrated on the palate, with a lush, fascinating fruit and acidity and a great length.

Vinification
Careful whole bunch pressing and clarification of the highly viscous must. Fermentation and subsequent 18 month maturation in french oak barriques.

Viticulture
Year round soil cover with plants and greens promoting beneficial insects on every second vine row. Additional cover on other vineyard areas for 6 months a year. Careful pruning and early foliage work is vital vigorous vines. Moderate defoliation keeps the grapes healthy until fall. The dense fogs in fall and the thin skinned, ripe berries are ideal for an even development of botrytis.
Food Pairing
Formidable with aged, intensive soft cheese. Great as a contrasting pairing to a fresh, tart citrus sorbet. Or on its own with a nice espresso as a small but excellent dessert.
