Vinification
The basis of our sparkling wine is our hand-picked Riesling, which was fermented and stored in large oak barrels. As a traditional bottle fermentation, the sparkling wine matures on the yeast for at least 15 months to achieve a fine perlage. We added a shot of red wine to this bottle-fermented sparkling wine during disgorging.
