Vinification
› Harvest Date: April 5 – 6 › The grapes were handpicked into 20-kilo bins. › Traditional winemaking methods were used, including a 2-day cold prefermentative maceration. The wine was fermented in concrete vats without an epoxy coating for 18 to 22 days. The cap was subjected to punching down and pumping over. Fermentation took place at 25°C (77°F). › The wine was then aged in 225-liter (60-gallon) barrels and 500-liter (132-gallon) pipes for 14 months.
Vineyard
› Grapes harvested from Petit Verdot Block No. 1. › Soil: Rocky sandy loam, with medium to low fertility and a low percentage of organic material. Well-drained, with very low salinity levels. › Irrigation System: Drip irrigation › Altitude: 1,090 masl / 3,576 fasl › Year of Vineyard Implantation: 1999 › Climate: Harsh winters and warm summers with mild or warm days and very cold nights. The broad daily temperature range (15°C / 59°F) to which vines are exposed during their vegetative growth favors color development and tannin production. › Vine Management Type: Medium-density canopy, intended to protect clusters from direct sunlight. A no-till system is used to preserve the native vegetation, in combination with the use of rye as a cover crop. Spur pruning was used.
