Description
The Cordon Royal shows off the Pinot Noir from the Côte des Bar in all its typicity. It is made in an Extra-Brut style, with only 4g/l dosage.
Golden yellow in colour. Powerful, complex nose revealing a mature wine. Dominant tertiary aromas with notes of brioche, honey, biscuit, cooked pear and a touch of cinnamon and liquorice. Full-bodied mouthfeel with a lot of presence and perfect balance.

Vinification
We harvest when the grapes are well-matured, often a week after our neighbors. We vinify each parcel separately in stainless steel tanks, full malolactic fermentation is allowed on each cuvée.
Vineyard
We choose the best plots of Pinot Noir from our 18 parcels when making our vintage Cordon Royal. Our soil is agilo-calcaire with a Kimmeridgian sub-soil.
Maturation
We let the wines mature in the tank until the following July, and after bottling they gain complexity by resting "sur lie" for 2-4 years prior to disgorgement.
