Description
Appellation : TOURAINE OISLY New Appellation of the Loire Valley. A pale yellow wine. Great aromatic intensity. The nose opens brilliantly with aromas of ripe apricot and white fruits: pear and peach. The full, powerful, palate leads to a fresh finish with notes of exotic and citrus fruits. A wave of delicacy and elegance. Ideal for pan-fried scallops, grilled prawns, fish in sauce.

Vinification
Harvesting method: Mechanical Wine-making: Destemming of the entire harvest. Vinification without sulfur. Slow fermentation in thermo-regulated stainless steel tanks at a controlled temperature of 14°C. Aging on very fine lees with stirring in spring until bottling.
Vineyard
The DOMAINE OCTAVIE is located on a plateau between the Loire and the Cher, in the village of OISLY, in the east-side of the TOURAINE Appellation. The climate is oceanic with continental tendencies. Winters are quite mild, and severe frost is exceptional (rarely below -10°C). Summers are never excessively hot. The autumn is usually fine and very sunny which is particularly suitable for the Sauvignon grape variety. Soils are composed of sands on flint clays.
