Vinification
Harvest by hand to small cases of 15 kg. The bunches are de-stemmed and pass by a sorting table for an optimum selection of the berries. Grapes are foot trodden in traditional shallow open marble troughs, known as lagares. Malolactic fermentation then takes place in French oak barrels. Ageing 18 months in small French oak barrels.
Vineyard
The microclimate in the sub-region of Borba ensures above-average rainfall as well as slightly lower than average levels of sunshine for the Alentejo, producing wines that are particularly fresh and elegant.
Soil Type
The terrain is punctuated by unique soils, huge deposits of marble that have made an indelible mark on vine growing and the character of the sub-region's wines. Substantial patches of red schist spread throughout austere and poor soil form a markedly different typology in Borba, one of the Alentejo's most dynamic sub-regions. Training method: Guyot unilateral, bilateral and unilateral Royat cord Exposure: It depends on slope and on soil orientation, but the exposure is predominantly northwest - southwest and nort - south Integrated plant protection is a combination of methods which reduces chemical plant protection measures to the absolutely necessary minimum. We only use products that are authorized by the existing legislation.
