Julien de Savignac Bergerac AOP 2017
Description
Shiny and dark ruby colour. The nose is both charming and intense with notes of ripe black fruits, redcurrant jelly and hints of vanilla, which adds subtle spice to the aromatic profile. A flattering wine on the palate, with a soft impression, very long and round. Well-structured and finely balanced, this wine is ready to drink now with a wide variety of foods (red meat, roasted veal, breast of duck, etc.).
Vinification
Respect of traditional methods while applying modern techniques: strict temperature control, studied extraction of colour and tannins, regular tasting during the entire wine-making process
Vineyard
A selection of clay and chalk plateaux which dominate the valley of the Dordogne river
Maturation
Ageing is conducted in high quality oak barrels. Careful monitoring of its evolution, regular tasting, and respect of the wine’s potential are foundational elements involved in this wine’s 15-month ageing process.
