Vinification

The grapes of the vineyard were manually harvested into small boxes. They went through hand sorting to guarantee only the best grapes were used. Stalk removal, crushing and finally fermentation took place in a stainless-steel tank during 6 days with temperature control. The always remained at the bottom of the tank without being mixed with wine. A careful maceration was made for best expression and typicity of the grape varieties, privileging the fruit extraction. Ageing was made in third use barrels for 12 months. The wine spent another winter in stainless steel, favouring its natural stabilization before bottling. A slight clarification was made with an agent of vegetable origin. Natural stabilization until bottling and a slight filtration in order to maintain all its potential. It is thus subject to a small natural sedimentation during the ageing in the bottle. Free of any product of animal origin.

Vineyard: Nelas

The Kelman family vineyard lies in the heart of the demarcated region of Dão, a plateau surrounded by mountain escapes as Serra da Estrela, Serra da Nave and Serra do Caramulo. It is one of the oldest and most traditional wine regions of Portugal. The vineyard has 7 hectares of native varieties planted in year 2000. Our vineyard stands at 450 meters on a mild slope. Sandy soils of granitic origin provide good drainage. The temperate climate of continental influence offers cool, rainy winters and dry, sunny summers. Daily temperature amplitude favors grapes with a good balance between sugar and acidity, key to producing elegant and fresh wines with great potential for aging.

Food Pairing

Taste now or wait, as this wine has an excellent aging potential. Food pairing: meat dishes and cured cheese. Bottles should be kept horizontally in a mild environment with controlled temperature, away from light. A decanter is suggested to release its maximum potential.
