Vinification

The harvest /crop for the Crémant d’Alsace starts usually begining of september. Our winemaker controls the maturity in the selected plots. Grapes are exclusively picked by hand within a limit of less than 100kg per container. Bunches are put intact in the pneumatic press on low-pressure programs. After a first fermentation in tanks, it is in the bottle itself that a second fermentation takes place and this is how the wine will naturally become sparkling. This specific process is called the Traditional Method, which is used as well for the elaboration of Champagne. The bottles are ageing 14 to 18 months « sur lattes » – which is over the legal period of minimum 12 months –This is the choice of Kuehn winery in order to gain in finesse and structure. After this period the bottles are rotated on automatic riddling racks in order to prepare the bottles for the next step called « disgorging » which consists in the ejection of the sediments due to the second fermentation. After ejection the resulting space is filled with a liquor of varying degrees of sweetness adapted to the type of sparkling style: « Brut », « Sec » Dry or « Demi-Sec » Half Dry. The Alsace Crémant Brut Cuvée Prestige dosage is about 7 to maximum 9g of residual sugar per liter.
