Vinification

Our winemaker follows with a special care the rules of the specific legislation of the Appellation Alsace Grand Cru. He controls the maturity in the selected plots until the harvest, which usually starts end of September. The bunches are exclusively harvested by hand, and are crushed in our pneumatic press on low-pressure programs. After fermentation and vinification, the wine stays many months on its lies in order to gain in structure, before bottling end of spring and maturation in the bottle. Their intense and complex aromas, as well as their unique structure, are placing the Alsace Grands Crus wines among the greatest white wines in this world.

Vineyard

The AOC Alsace GRAND CRU KAEFFERKOPF is located on the best hillsides of Ammerschwihr; its soils are made up of Granite with shelly limestone on its upper parts and sandstone lower down. Situated on an altitude of 240-350 metres, and on a slope reaching 15 to 35% in places, the Kaefferkopf vineyard faces mainly East. The wines of the Kaefferkopf are capable of revealing their signature elegance allied to powerful aromas. The longstanding historical reputation made this Grand Cru one of the jewel in the crown of Alsace vineyards, and it was granted juridicial protection as far back as 1932, long before even the concept of Appellation d’Origine Controlée had emerged.
