Vinification
The grapes are harvested within the first ten days of September and soft pressed at a temperature of 10°C. The first fermentation takes place in stainless steel tanks at a maximum temperature of 15°C; The Charmat method is employed for the secondary fermentation, lasting 45 days and with an additional 2-3 months on the lees.
