Vinification
The hand selected grapes are destemmed and crushed. After a maceration period of 24 hours the mash is pressed carefully with a pneumatic press. The clarified grape must is fermented with selected yeasts at a temperature of 17 degrees Celsius. This Roter Veltliner will remain on the fine yeast until May of the following year.
