Vinification
The grapes were all harvested by hand. In the winery the grapes were destemmed and perfectly selected with our optical sorting machine followed by a single berry sorting by hand. Fermentation took place in stainless steel tanks at a temperature of around 18°C.
Vineyard
The loess soil of the Kaiserstuhl region creates wines with fruity intensity and an easy accessibility. However, the accumulation of lime in deeper root layers combined with sufficient grape ripeness and ripening on the fine lees results in a longer shelf life . All grapes are reduced in crop levels during the green harvest to increase the inner quality.
Maturation
Due to the low yields and longer storage on the fine lees, the shelf life is extremely increased. Using screw caps with a tin-saran liner also increases the shelf life.
