AOP Bordeaux Supérieur, dry red still wine, made only from merlot grapes harvested in our best plots. Traditional vinification.

Vinification

Green harvest in late June, early July to keep the best grapes only and obtain a greater concentration of grapes. Selection on the plot during the manual harvest. Destemming by hand at the vineyard in order keep only the grape berry and eliminate all plant debris. Light crushing before barrelling in little, open stainless steel tanks of 25 hectolitres. Alcoholic fermentation in thermo-regulated tanks between 25 and 27°C. Pumping over gently several times a day by punching down the cap manually. This enables us to maintain the pomace immersed during the fermentation period, which is then prolonged by a two-week vatting in order to obtain tannins of a better quality. Pneumatic pressing of the marcs under low pressure (1 bar at the most). Barrelling in new French barrels (made from the Allier forest) for the malolactic fermentation. Ageing in barrels between 15 to 18 months, stirring during the first six months. Fining and stabilization of the wine followed by racking. Bottling at the Château after a light filtration.

Vineyard: Gornac

The Entre-deux-Mers region is situated within the Bordeaux Appellation and benefits from oceanic climate due to its closeness to the Atlantic. The winery's terroir mainly consists of clay- and limestone soils.

Food Pairing

Highly concentrated, we can observe an intense black color, with complex the complex aroma of blackberry/blackcurrant, spice and vanilla. You will find a round mouthfeel with very silky tannins balancing the franc notes of berries. Perfect with meats in sauce, game and cheese. Or chocolate desserts. This wine can age up to 8 years. Open 2 to 3 hours ahead of tasting. Serve ideally at 16-18°C.
