Vinification
Mechanical or manual harvest, with destemming in the vineyard, during the cool hours of the day - between 5 and 8 in the morning Two different techniques are used : - Traditional vinification for the merlot grapes - Thermovinification for the cabernet sauvignon grapes by gently heating the harvest to 75°C, in order to intensify the grapes' fruit aroma and soften the tannins. Maceration for 6 hours, after which the harvest ist cooled back to 20°C. Pressing halfway through the fermentation process. Once the alcohol fermentation complete, the malolactic fermentation is started. Maturing on fine lees for a year with regular stirrings (every 3 months). Fining and stabilization of the wines before pre-filtration. Filtration and bottling at the Château.
Vineyard: Gornac
The Entre-deux-Mers region is situated within the Bordeaux Appellation and benefits from oceanic climate due to its closeness to the Atlantic. The winery's terroir mainly consists of clay- and limestone soils.
Food Pairing
Deep colour, intense aroma of red fruit, especially blackcurrant. Soft tannins and roundness, well balanced with the fruit notes can be tasted. Perfect with red meat or cheese. It should be served at 15-16°C. This wine can age from 3 up to 5 years.
