Vinification
Manual sorting of damaged or unripe fruit 24 hours ahead of harvest. Mechanical harvest, with destemming in the vineyard, during the cool hours of the day - between 5 and 8 in the morning Stripping in the vineyard to prevent any plant debris from macerating. Crushing on delivery of the harvest. Under cover of inert gas : - Cold skin maceration for four hours for muscadel and semillon grapes and for six to eight hours for the sauvignon - Pneumatic pressing (at low pressure, 1bar at the most), - Flotation settling : a very fast and efficient technique in order to protect the juice. Alcohol fermentation in stainless steel tanks, thermo-regulated between 16 and 18°C until the sugars have completely dissapeared. Maturing on fine lees for a few months with regular stirrings. Fining and stabilization of the wines before pre-filtration. Sterile filtration and bottling at the Château.

The Entre-deux-Mers region is situated within the Bordeaux Appellation and benefits from oceanic climate due to its closeness to the Atlantic. The winery's terroir mainly consists of clay- and limestone soils.

Food Pairing
The use of both Sauvignon Blanc & Gris, alongside some Muscadel and Semillon grapes, is accurate and makes an ideal blend to achieve a balance between freshness, fruit, length and roundness. It delivers aromas of exotic fruits, ripe pear, and citrus. Perfect with grilled fish, shellfish, or asparagus. It is also enjoyed as an aperitif. It should be served fresh between 8 and 10°C within 2 years.
