Vinification
Manual selection on the parcel 24 hours before harvest in order to put aside the grapes that are damaged or too green. Mechanical harvest, with destemming in the vineyard, during the cool hours of the day - between 5 and 8 in the morning. Straight pressing for Cabernet Franc and merlot grapes: - Pneumatic pressing (low pressure, 0.8 bar at the most), - Flotation settling : a very fast and efficient technique in order to protect the juice. Alcoholic fermentation in stainless steel tanks, thermo-regulated between 16 and 18°C until the sugars have completely disappeared. Maturing on fine lees for a few months with regular stirrings. Fining and stabilization of the wines before pre-filtration. Sterile filtration and bottling at the Château.
Vineyard: Gornac
The Entre-deux-Mers region is situated within the Bordeaux Appellation and benefits from oceanic climate due to its closeness to the Atlantic. The winery's terroir mainly consists of clay- and limestone soils.
Food Pairing
This is a brilliant Clairet, with intense red shades. The use of Merlot and Cabernet Franc is accurate and makes an ideal blend to achieve a balance between freshness, fruit, length and roundness. It delivers aromas of ripe red fruits. Perfect with grilled meat, exotic dishes, paellas in summertime. It should be served between 8 and 10°C within 2 years.
