Vinification
Manual selection on the parcel 24 hours before the harvest in order to put aside the grapes that are damaged or too green. Mechanical harvest, with destemming in the vineyard, during the cool hours of the day - between 5 and 8 in the morning. Straight pressing for Cabernet Franc and merlot grapes : Pneumatic pressing (low pressure, 0.2bar at the most), Flotation settling : a very fast and efficient technique in order to protect the juice. Alcoholic fermentation in stainless steel tanks, thermo-regulated between 16 and 18°C until the sugars disappear completely. Maturing on fine lees for a few months with regular stirrings. Fining and stabilization of the wines before pre-filtration. Sterile filtration and bottling at the Château.
Vineyard: Gornac
The Entre-deux-Mers region is situated within the Bordeaux Appellation and benefits from oceanic climate due to its closeness to the Atlantic. The winery's terroir mainly consists of clay- and limestone soils.
Food Pairing
This is a brilliant light coloured Rosé. The use of Merlot and Cabernet Franc, is accurate and makes an ideal blend to reach a balance between freshness, fruit, length and roundness. It delivers aromas of raspberries and white fruits. Perfect with grilled meat, exotic dishes and paellas in the summertime. It should be served fresh between 8 and 10°C within 2 years.
