Vinification
Gentle pressing below 1,8 atmospheres, natural sedimentation, temperature controlled fermentation at 16°-18°C in stainless steel tanks. Ageing on the lees, one filtration only prior to bottling.
Vineyard
Two of the most classic Riesling origins in Germany: Nierstein "Roter Hang" - the centrepiece of Nierstein vineyard appellation, red slate soil. – and Oppenheim. Rheinhessen / Germany. Grapes originating from classified GROSSES GEWÄCHS / Grand Cru vineyards Nierstein Oelberg and Oppenheim Kreuz.
Soil Type
Red slate, unique soil composition that pronounces the mineral character of Riesling. Steep hillsides along the Rhein river (Nierstein) and heavy chalky-loam soil (Oppenheim) for depth, intense mouthfeel and excellent Riesling expression.
Viticulture
Sustainable farming and grape growing. Exclusive use of organic fertilizers, no irrigation, defoilage by hand for reduced use of pesticides and healthier grapes, cover plants as natural fertilizer, to increase biological activity of the soil and to reduce soil compression, hand selected harvest with maximum grape temperatures at harvest below 15°C.
Maturation
Ageing in stainless steel tanks.
